Peruvian cuisine is accompanied by a wide variety of sauces and creams that add flavor and unique touch to their dishes. At Kosmos Peru, we bring you a list of 8 different Peruvian hot sauces for you to challenge your tastes and turn your dishes around with different flavours.

1. Rocoto sauce

The Rocoto is a native chili pepper from Peru, with a unique and very spicy flavor. To prepare this Peruvian sauce you must put 1 hot pepper, ¼ cup of evaporated milk, the juice of 1 lemon, and 1 cup of oil in the blender until it has the consistency of a sauce. Add salt to taste. It is ideal for all meals like meats, stews, or soups.

2. Rocoto Carretillero

To prepare this Peruvian hot sauce you will need these ingredients: 2 Rocotos, 1 onion cut into small squares, Chinese onion chopped into small cuts, 1/2 lemon, oil, water, and salt to taste. Once you have these ingredients you will only need to add the hot pepper in a blender, without seeds, and veins.

Add the water and oil while it is blending. Once blended, pour the mixture into a bowl, add the salt and juice of half a lemon, the diced onion, and the Chinese onion. That's it!

3. Ají Amarillo Sauce

This Peruvian hot sauce needs:  ¼ kg. yellow chili pepper chopped into pieces, remove the seeds. Then soften it in boiling sugar water for 5 minutes. Rinse well. Heat oil in a pan and fry the peppers for 5 minutes Season.

Finally, place the peppers in the blender with 100 gr. of fresh cheese until it takes the consistency of a smooth puree. It is ideal for fish, all kinds of meats, or whatever you want.

4. Ají pollero

For this classic Peruvian sauce, you will need 3 yellow peppers, a quarter of red onion, 2 cloves of garlic halved, 4 tablespoons of water, 1 branch of coriander, 1 branch of huacatay, 5 grains of black pepper, a teaspoon of salt, 2 tablespoons of vinegar, 1 tablespoon of mayonnaise.

Take the 2 peppers and with the help of a knife clean them of veins and seeds. Take the leftover chili pepper and cut to remove the green stem. Finely chop the onion and the garlic clove in two.

Then place the chili pepper, onion, garlic, and water in a glass bowl, cover, and cook in the microwave at power 6 for 3 minutes, after time passes, remove from the microwave. Blend the vegetables with pepper, salt, and vinegar for 30 seconds. Add the herbs 10 seconds before finishing with the smoothie.

5. Ocopa sauce

Sauté 6 yellow peppers and 3 garlic cloves and 1 finely chopped small onion in a pan. Put the mixture in a blender and add 250 gr. of fresh cheese and 6 soda crackers. Add ½ cup of evaporated milk until it turns creamy. Later add 100 gr. peanut and season to taste. It goes well with potatoes, pasta and all kinds of meat and fish.

6. Pachikay sauce

This Peruvian sauce requires that all ingredients be finely diced. You will need to add in a bowl two tablespoons of red onion chopped into small cubes, one tablespoons of minced aji limo, two tablespoons of hot pepper, two tablespoons of finely chopped ginger, a tablespoon of garlic, salt to taste, pepper to taste.

Once everything is in the bowl, heat ¼ cup of vegetable oil for 3 minutes, then pour it into a bowl and mix. Once integrated add 4 tablespoons of sesame oil and finish with two tablespoons of chives.

7. Salsa a la Huancaína

One of the most typical is the Huancaína sauce, which originally was only part of the “Papa a la Huancaína” dish. Today, we can use it in various dishes such as meats, pasta, potatoes, and fried foods of all kinds.

To prepare it, start by washing 5 yellow peppers and then cut them into small pieces. Do the same with ½ onion and a clove of garlic. Sauté everything in the pan with a little oil until golden brown and let cool.

Then, pour this mixture into the blender and add 6 soda crackers, 250 grams of fresh cheese, and ½ cup of evaporated milk, plus salt and pepper to taste.

8. Salsa Criolla

Wash 1 large purple onion and cut it into a feather. Do the same with yellow pepper. Let the onions soak in salty water for about 10 minutes to soften them. After rinsing it, mix it with the chili pepper, 1 tablespoon of coriander, 2 tablespoons of lemon juice, 1 tablespoon of vinegar, and salt and pepper to taste.
