Sancochado has a preparation time of 30 minutes and a cook time of approximately 3 hours, this recipe serves roughly 6 portions, depending on how you serve them.
TIP 1. Take out all vegetables and tubers from the soup pot for a serving time. The soup should sit for around 15 minutes. For serving the sancochado, you need two plates, the first one being a deep plate that will be used for soup and a third flat plate to serve the sides. Serve 2 cups of liquid in a bowl. You can also add some chopped cilantro and do it on top.
If you'd like to use mint and parsley. On a flat platter, put a large portion of each tuber and the vegetables: sweet potato, yellow potato, yucca and carrots, green beans, and cabbage. Serve it with a large part of the meat and 2 cups of chickpeas that have been cooked. You can drizzle a bit of olive oil over the top.
TIP 2 Large chunks of meat and vegetables used in this recipe are huge. This keeps the broth clean. On the other hand, cutting the tubers too small will let more starch out of the potatoes. This will result in a highly thick and dense soup-like mixture.
In the same way, some would prefer to cut down on fat to a degree. This is also an option.
Serve this dish with salsa or corn Criolla.
